10-minute garlic sesame noodles with broccoli and carrots

Quick and easy Asian stir-fried garlic sesame noodles and loaded with broccoli and carrots. A perfect meatless main or side dish!

Ingredients
  • 1 14-oz. package cooked udon noodles
  • 1 Tbsp. canola oil
  • 2 cups broccoli florets
  • 1 Tbsp. sesame oil
  • 5 cloves of garlic minced
  • 2 medium carrots, julienned
  • 2 Tbsp. soy sauce
  • 2 tsp. sweet soy sauce (kecap manis)
  • 1 tsp. fish sauce
  • 2 Tbsp. water
  • Black sesame seeds, for garnish
  • Greens from 2 scallions, thinly sliced
  • Sambal oelek or other spicy sauce (optional)
Instructions
  1. Whisk together the soy sauce, sweet soy sauce, fish sauce and water in a small bowl, Set aside.
  2. Heat the canola oil in a wok over medium-high heat. Add the broccoli and a little water and cook for 3 minutes, until the broccoli is just tender. Transfer to a bowl.
  3. Return wok to stove and add the sesame oil. Add the garlic and cook for 30 seconds. Add the carrots and cook for 1 minute. Add the noodles, broccoli and sauce and cook for two minutes, stirring constantly. Transfer to a serving bowl and sprinkle with sesame seeds and scallions. Stir in sambal oelek or other hot sauce, if desired.
