The super-popular salted chocolate shortbread cookies that are taking the internet by storm. I had to try them for myself. So do you!

Ingredients
  • 2¼ sticks salted butter, at room temperature
  • ½ cup granulated sugar
  • ¼ cup dark brown sugar
  • 1 ½ teaspoons vanilla extract
  • 2 ½ cups all-purpose flour
  • 6 ounces bittersweet dark chocolate, coarsely chopped
  • 1 large egg, beaten
  • Sugar in the Raw, for rolling
  • Flaky sea salt, preferably Maldon, for sprinkling
Instructions
  1. Line 2 baking sheets with parchment. Set aside.
  2. In the bowl of a stand mixer, beat together butter, both sugar and vanilla until light and fluffy.
  3. Slowly add the flour, then blend in the chocolate chunks.
  4. Divide dough into two pieces and roll each into a log (use plastic wrap so it doesn't stick to your hands.) Each log should be about 2 inches in diameter. Wrap in plastic and refrigerate at least 2 hours.
  5. Preheat oven to 350F.
  6. Brush each of the logs with the egg and then roll in the sugar to coat, pressing some of it onto the dough with your hands.
  7. Use a serrated knife to slice the dough into ½-inch thick slices and place on the prepared baking sheet. Sprinkle with a little sea salt.
  8. Bake until firm and edges are just starting to brown, about 12 to 15 minutes.
