Chard salad with blue cheese, walnuts and apples

Ingredients
  • 1 tsp. honey
  • 2 Tbsp. apple cider vinegar
  • 3 Tbsp. Extra Virgin olive oil
  • Salt and pepper
  • 1 medium bunch Swiss chard, tough stems removed
  • 1 celery stalk, thinly sliced
  • 1 scallion, thinly sliced
  • 1 apple, cut into small cubes
  • ½ cup walnuts, toasted and coarsely chopped
  • ½ cup blue cheese, crumbled
Instructions
  1. Whisk together the honey, vinegar and oil. Season to taste with salt and pepper. Set aside.
  2. Chop the chard into bite-sized pieces and place in a large bowl. Top with the celery, scallion, apples, walnuts and blue cheese. Pour dressing over and toss well to coat.
  3. NOTE: if making ahead, dress the salad just before serving.
