Serves: 4-6 servings
Ingredients
  • 1 ½ lbs. ground beef
  • 1 c. chopped onion
  • ¾ c. chopped green pepper
  • 1 28 oz. can whole tomatoes, Italian style, broken with hands
  • 1 1-lb. can kidney beans, drained and rinsed
  • Salt and freshly ground black pepper to taste
  • 3-4 Tbsp. chili powder
  • ½ tsp. garlic powder
  • 1 bay leaf
  • Crushed red pepper to taste (optional)
Instructions
  1. Cook beef, onion, and peppers until meat is browned and vegetables are tender. Drain fat.
  2. Stir in everything but kidney beans and simmer about 45 minutes. Add beans and cook 15 minutes more or until chili reaches desired thickness. Remove bay leaf before serving.
