Crab sandwich with avocado on a flaky croissant

Serves: 4 servings
Ingredients
  • 1 pound claw crab, picked over for bits of shells
  • Juice and zest of ½ a lime
  • A small handful of cilantro, chopped
  • 1 celery rib, finely chopped
  • 2 tsp. Extra Virgin olive oil
  • 1 avocado, thinly sliced
  • 4 croissants
Instructions
  1. In a bowl, gently combine the crab with the lime juice, lime zest, cilantro, celery and olive oil. Season to taste with salt.
  2. To serve, divide the crab mixture among the 4 bottom of croissants. Top with sliced avocado and croissant tops.
