Avocado and crab sandwich

Serves: 4 servings
- 1 pound claw crab, picked over for bits of shells
- Juice and zest of ½ a lime
- A small handful of cilantro, chopped
- 1 celery rib, finely chopped
- 2 tsp. Extra Virgin olive oil
- 1 avocado, thinly sliced
- 4 croissants
- In a bowl, gently combine the crab with the lime juice, lime zest, cilantro, celery and olive oil. Season to taste with salt.
- To serve, divide the crab mixture among the 4 bottom of croissants. Top with sliced avocado and croissant tops.
