What better way to kick off the month of May than with a simple, delicious cocktail that tastes like summer in a glass? This basil-watermelon margarita is refreshing and easy to make. Simply muddle fresh watermelon with some basil (I used Thai), tequila, simple syrup and lime juice. Shake with ice, strain and voila!
This was the situation on Saturday: we had our typical crazy morning of soccer games and a Daisy scout event. But the afternoon was wide open and it was sunny and 80 degrees. We were making ribs on the barbecue, a 4-hour affair. The kids were relaxing and watching a movie, the air was filled with the smell of hickory and charcoal from the grill and the sun was shining. So I whipped up this watermelon margarita and sat on the deck to peruse a new cookbook. A girl would get used to Saturdays like this!
- ½ cup cubed watermelon
- 1 oz. simple syrup*
- 2 oz. tequila
- Juice of ½ a lime
- 6 basil leaves
- Muddle the watermelon in a cocktail shaker. Add the simple syrup, tequila and lime juice.
- Tear the basil leaves into the mixture and add some ice. Cover and shake well.
- Strain into a glass and garnish with a small wedge of watermelon.
- *To make simple syrup, combine 1 cup sugar and 1 cup water in a small saucepan and heat until sugar is completely dissolved. Store in a jar in the fridge for up to 2 weeks.
