These triple chocolate chunk cookies are loaded with white, milk and dark chocolate. The dough can be made ahead and frozen so you can have fresh baked cookies any time!
When we have friends for dinner – which is fairly often – I love to throw fresh cookies in the oven after dinner. It all started this past summer when I forgot to bake the cookies ahead of time so I had no choice but to throw them in the oven after dinner. The result: a house that smelled like fresh cookies and a dessert everyone loved. Since then, it’s my thing. Have guests=make cookies.
These particular triple chocolate chunk cookies are beyond perfect for guests because the recipe makes a big batch, but the dough can be rolled, thrown into a freezer bag, and tucked in the freezer for any time you’re craving fresh cookies. Having a few people? Take out a dozen. Hosting a crowd? Bake the whole batch. And in my case, if you don’t want to look like a total dork in front of your friends by snatching the freshly baked cookies for a photo shoot, you can bake a few more the next day and snap as many pictures as you want 🙂
- 2¼ cups flour
- 14 ounces mixed chocolate (white, milk and dark), coarsely chopped
- 2 sticks unsalted butter, at room temperature
- 1 cup packed dark brown sugar
- 1 cup white sugar
- 1 tsp. salt
- 1 tsp. baking powder
- ½ tsp. baking soda
- 2 tsp. vanilla
- 1 egg
- In a medium bowl, stir together the chocolate and flour. Set aside.
- In the bowl of a stand mixer, combine the butter, brown sugar and white sugar and beat until light and fluffy. Add the salt, baking soda, baking powder and vanilla. Add the egg and mix until combined.
- With the mixer on low speed, gradually add the flour and chocolate until the dough comes together.
- Preheat oven to 350F.
- Form the dough into 1 tablespoon balls and place on parchment lined baking sheets, 2 inches apart. At this point, you can bake the dough or pack into freezer bags and freeze until ready to bake.
- Bake for 10-12 minutes or until just starting to turn golden around the edges. Cool on baking sheets.
