Light and refreshing 3-ingredient watermelon sorbet. A cool treat for a hot summer day and a great way to use extra watermelon.
I have a bit of a shopping problem. I cannot resist a deal. Like when whole watermelons were only $3.99. Who cares if only two of us like watermelon? A deal’s a deal, right? I know, I know. It’s only a deal if I actually use the watermelon (said my Dad’s voice inside my head!). And so, I found ways to use the whole watermelon. Little Nutmeg and I nibbled away at as mush as we could. A bit of it went into watermelon margaritas, and the remainder went into this refreshing and easy watermelon sorbet.
This is sooooooo easy: watermelon, powdered sugar, lemon juice. Throw them in the blender and then in an ice cream maker and done. That’s my kind of summer dessert. You could add a little mint or basil to put a twist on the flavor, but I kept is straight up so little Nutmeg would enjoy it. And guess what? Squeals of delight. So go ahead, buy the whole watermelon. Then whip up a batch of this sorbet while you sip your margarita.
- 3 cups seedless watermelon, cubed
- ¾ cup powdered sugar
- juice of 1 lemon
- Combine all ingredients in a blender. Process until smooth.
- Pour into an ice cream maker and churn for 20 minutes. Serve immediately or transfer to a freezer-safe container and freeze. Allow to soften slightly before serving.
