This delicious Fall bourbon cocktail combines apple cider, cinnamon and a hint of thyme with bourbon for an easy-to-make drink that is perfect for cool Fall nights.
Happy Friday! And it’ll be a good one. It’s nice and cool in New Jersey and the Yankees take on the Red Sox in the playoffs. No better way to enjoy the game than with a nice Fall drink like this cider bourbon cocktail. I don’t make a lot of cocktails – I’m a fan of the classics like Moscow mules, gin and tonic, etc., but most of the time I stick with a good cold beer. I’ll occasionally have a bourbon on the rocks or a Campari and soda on a chilly night while I’m making dinner, but this delicious bourbon drink was inspired by a fresh bottle of New Jersey apple cider.
The recipe below makes two, but you can easily multiply it for guests. Heck, it’s Friday – make a whole pitcher 🙂 The cinnamon sugar rim is optional, but it adds so much to the flavor of the drink. My bourbon of choice is Basil Hayden’s, but for these cocktails I used Bulleit – delicious on its own, but perfect for mixing.
- Cinnamon sugar (for rimming glasses)
- 3 sprigs fresh thyme
- Juice of half a lemon
- 6 oz. apple cider
- 3 oz. bourbon
- Ginger beer
- Apple slices (for garnish, optional)
- Wet the rim of 2 glasses. Dip them in the cinnamon sugar, then fill them with ice.
- In a shaker, muddle 1 sprig of the thyme with the lemon juice. Add the cider and bourbon and shake well.
- Use a strainer and pour into the prepared glasses. Top each with some ginger beer (about an ounce each). Garnish with remaining thyme and apple slices.
