I’m a big fan of Moscow mules. They are quite the rage right now, with versions popping up on every cocktail menu. I even bought my husband a set of cool copper mugs for Christmas last year (ok, fine, they were as much for him as they were for me!). I am also a big fan of putting cucumber in my cocktails. It’s a bright fresh flavors that pairs well with sweet and tart. Plus, I usually have lots of cukes on hand during the summer.
I also happen to be on a popsicle-making kick, which started with Bellini popsicles and then led to these babies. They are super easy to make with a blender and are perfect on a hot Saturday afternoon. Now to figure out what kind of grown-up popsicle to make next…
- Juice of 2 limes
- 1 small Kirby or Persian cucumber
- 3 oz. vodka
- 1 can ginger beer (12 oz.)
- Combine the cucumber and lime juice in a blender and blend until smooth. Stir in the vodka and ginger beer.
- Using a funnel, pour into popsicle molds. Freeze at least 6 hours or until solid.
